Local food writer (and dedicated bacon-freak) Eliza Cross hits us with “101 Things To Do With Bacon,” a new spiral-bound book that delivers on the promise of its title. Find it at local bookstores or online.

Blue Cheese, Bacon, and Pear Toasts

From “101 Things To Do With Bacon,” by Eliza Cross (Gibbs Smith). Makes 18-24 appetizers.

Ingredients
1    thin French baguette
2    tablespoons butter or margarine
2    Bosc pears
6    strips bacon, cooked and crumbled
3    ounces blue cheese, crumbled

Directions
Cut the baguette diagonally in 1/2-inch slices and arrange slices on a baking sheet. Spread with butter, and broil just until lightly browned, about 2 minutes. Divide the pear slices evenly among the bread; sprinkle with the bacon, and top with the blue cheese. Broil until the cheese melts, about 2 minutes.
