Twice this summer a venerable Boulder eatery has found fertile ground for a new location east of the city limits, contributing to what has become a busy year for restaurant openings in eastern Boulder County this year.

In July, the Lazy Dog Sports Bar & Grill — a Pearl Street Mall staple — launched a 4,000-square-foot restaurant in the Village at Vista Ridge Shopping Center in Erie.

On Monday, Boulder’s longtime Walnut Café will throw open the doors on a new location in Lafayette.

Dubbed the Super Mini Walnut Café, the breakfast-and-lunch favorite will occupy the space at 95th Street and Arapahoe Road once held by Canopy Grill. It will be the company’s third location, joining the nearly three-decades-old Walnut Café and the 6-year-old South Side Walnut Café, both in Boulder.
