New Mexico, Colorado-style
Travel editor Kyle Wagner (and former Post restaurant critic) offers a list of Colorado restaurants that specialize in New Mexican food:
Blow-your-hair-off-hot green chile that’s among the best in town.
: Chimayo rellenos stuffed with goat cheese. The Navajo stew and posole also are authentic and delicious.
One of the rare places that offers a vegetarian green chile option — in addition to a delectable, tender-pork-studded original
The red chile is a deep, rich, thick concoction that speaks of serious attention and know-how.
Mighty nice margarita as well as excellent carne adovada enchiladas and a self-proclaimed “gringo” creamy green chile sauce that’s out of this world.
For breakfast, try the tamale scramble, smothered with green chile and cheese. The enchilada torte at night is a fave — three corn tortillas stacked with meat.
: Well-rounded roster of vegetarian dishes and some smart combination plates for sampling. The Jim’s Favorite marg is the one to get.
Don’t even waver between the red and green here: Go Christmas all the way, and get the two sauces on the taco burrito. Kyle Wagner, blogs.denverpost.com/food
