From the April 25, 1976, issue of the Post’s Empire Magazine. Makes 6 servings.

Ingredients

6 fish fillets (sole, haddock, cod or halibut, fresh or thawed)

1 medium lemonSalt, pepper and paprika, to taste

1½ cups grated Swiss or cheddar cheese

½ tablespoon dry mustard

½ pint whipping cream, unwhipped

½ cup very fine dry bread crumbs

Directions

Preheat oven to 350 degrees.

Arrange fillets in a single layer in a greased baking dish. Squeeze lemon and sprinkle one side of fillets with half of the lemon juice. Sprinkle with salt, pepper and paprika. Turn over fillets, sprinkle with remaining lemon juice, salt, pepper and paprika. Sprinkle cheese on top of fillets.

Combine mustard and cream. Pour over fillets. Sprinkle crumbs on top.

Bake 35 minutes or until fish flakes easily with a fork.
