Interview with April Arellano, co-owner
Q: How did you get involved in this business?
A: Our coffee shop was founded by Jesse and April Arellano and Paul and Crystal Horning, two couples who were tired of cookie cutter coffee shops that were cold and didn’t care about the customer. So, we decided to create a warm, family-friendly and quality-driven coffee shop in Castle Rock.
Q: What distinguishes you from other businesses in your category?
A: We focus on quality and family friendliness. Our beans are custom roasted for us two times a week, so you know you will always have the freshest beans available. We use high-quality espresso equipment that is handmade in Italy for an authentic taste and great consistency. All eat-in orders are served in glassware. We think a presentation element has been lost and we are trying to bring it back. We have a great children’s play area equipped with table-mounted iPads to keep your little ones happy while you enjoy your drink. All of our cookies and pastries are baked fresh in the store. We bake to order if you want it hot and fresh from the oven. We also offer vegan and gluten-free options. We feature smoothies that are made with 100 percent crushed fruit with no sugar added, artificial flavors or colors. We brew our organic chai fresh in the store.
Q: What do you like best about your line of work?
A: The people. We love talking to everyone who comes in and getting to know them. We want you to feel like you’re family when you come in to Cookies and Crèma. Having our own business allows us to focus on what’s important, you the customer.
Q: What is your business’ biggest challenge?
A: Getting people to know our location; we are off the main road a little. Once you come to our store and feel and see the difference, you will truly see what our business is about.
Q: Something people might be surprised to learn about you or your business:
A: We never charge you extra for specialty milks or foods. If you want a vegan gluten-free cookie, it’s the same price as our regular cookies. Do you want soy, almond or coconut milk? It will not raise the price of your latte one cent. Why should you be penalized for a milk allergy or preference? Yes, it does cost us more, but we value you as a customer and would rather have your business than worry about the cost.
