Interview with Tomas Stibral, owner
Q: How did you get involved in this business?
A: I graduated from hotel and management school in Europe. I worked in many high-end restaurants and country clubs in Colorado. (Gasthof Gramshammer in Vail, Hotel Jerome in Aspen, Chateau Pyrenees in Denver, Castle Pines Golf Club, etc.)
Q: What distinguishes you from other businesses in your category?
A: We pride our restaurant on serving delicious dishes prepared from scratch. Our chef has been in the culinary field all his life and has a great knowledge and experience of European and American cuisine (Petroleum Club and McCormick’s in Denver). The restaurant decor is done in warm colors with mirrors and pictures of Prague, so it feels a lot like dining in Europe. In summer, our patio with the view of the mountains and live music on Fridays and Saturdays is very popular. Our friendly and attentive servers dressed in black and white, with a great knowledge of food and wine, will provide you with the best dining experience.
Q: What do you like best about your line of work?
A: To see the customers leave our place happy.
Q: What is your business’ biggest challenge?
A: Our biggest challenge is to always find some ideas for improvement and to keep up with the changes in the food and service industry.
Q: Something people might be surprised to learn about you or your business:
A: Our first restaurant was in Georgetown. We purchased The Full Circle Cafe from the ex-husband of Roseanne Barr. The cafe was featured in “America’s Most Haunted Places” on TV. No surprise, we had to do the tours in the basement for a lot of customers after remodeling and renaming the place Cafe Prague. Another interesting thing to mention is that Madeleine Albright dined at our restaurant several times. She enjoyed our Czech cuisine as well as the opportunity to carry on a conversation in Czech. She visited our place during her term as secretary of state, so even our kitchen got a visit from the Secret Service. The Café Prague in Georgetown, as well as our building in Morrison, were originally built as hardware stores.
