Interview with Bill Psyllas, owner

Q: How did you get involved in this business?

A: I have worked in the restaurant industry for the majority of my life, and have always wanted to open my own place. I found a spot in Parker that, with some work, was perfect.

Q: What distinguishes you from other businesses in your category?

A: Our focus is on local brewers and we currently have nine Colorado brewed beers on draft.

Q: What do you like best about your line of work?

A: I love meeting so many new people and satisfying their needs by providing really excellent customer service. This line of work is really rewarding when you get to send your customers home with a smile.

Q: What is your business’ biggest challenge?

A: The reputation of the former business was not good in Parker. Our biggest challenge is to prove to former customers that we’re here to stay, and here to serve them well. Because we’re in the same space, Hilltop Tap House is associated with the negatives from the previous place, and we’re trying hard to change that.

Q: Something people might be surprised to learn about you or your business:

A: The transition from the old place to the new place has been surprisingly smooth. For a brand new place, things are running great and our customers are consistently surprised to learn how few hiccups we’ve had. Also, I’m Greek and I serve a great burger.
