Interview with Zachary Bowen, co-owner
Q: How did you get involved in this business?
A: My father-in-law is the former owner of Las Margaritas at 17th Avenue and Downing Street. We decided to open up a new place together, as I’ve been in this industry for 20 years.
Q: What distinguishes you from other businesses in your category?
A: We serve the most flavorful street-style tacos in the neighborhood, including chicken tinga, al pastor, carnitas and many more. We did bring some of our old favorites from the previous Las Margaritas restaurant (like chiles rellenos, enchiladas and poblanos), but we recommend that you come in and try a few of our … la carte tacos to get a feel for our new style.
Q: What do you like best about your line of work?
A: I love meeting and talking to people in the neighborhood, and serving delicious food at affordable prices.
Q: What is your business’ biggest challenge?
A: Our biggest challenge is to become a staple in the Denver metro area because there are a number of bars and restaurants nearby. However, we think that with our amazing food, margaritas and TVs, we’ll quickly become a favorite hangout.
Q: Something people might be surprised to learn about you or your business:
A: People might be surprised to learn that although a business is a business, my passion is meeting people and making people happy.
