Interview with Josh Lubliner, owner
Q: How did you get involved in this business?
A: I worked for Chipotle Mexican Grill for five years and decided to go on my own and haven’t looked back since.
Q: What distinguishes you from other businesses in your category?
A: We are a locally owned and independently run restaurant featuring many local Colorado ingredients, brews and spirits, with friendly service and high-quality plates. What we do not do is serve food that is prepared elsewhere, frozen and shipped in cardboard boxes to be heated up fast-food style as you might find in many national chains. As a 100 percent made-from-scratch kitchen, we are proud to offer food that is prepared fresh on a daily basis using quality, creative, locally sourced ingredients where the end result is a great- tasting dish that will leave you wanting to come back for more. Add to that our friendly service and you have a winning combination in our local watering hole.
Q: What do you like best about your line of work?
A: I love the creative aspect of it, where I am able to come up with new dishes and creative cocktails, using different seasonal ingredients. It’s nice to be able to have 100 percent creative control and not have to run my ideas by a bunch of different managers. As an independent, I can move quickly on a new idea when I have one.
Q: What is your business’ biggest challenge?
A: The biggest challenge by far is juggling the million different tasks that come with running an independent restaurant. As we are not a chain, we don’t have the deep pockets and teams of people to support all of the things that go into making a restaurant tick. The best way for me to handle it is to come to work each day with a loose schedule in mind, but knowing that many different things will come up that I will have to manage on the fly.
Q: Something people might be surprised to learn about you or your business:
A: The fact that we have been here for more than six years. Before that, there were many different businesses that have been through our building, and we still get comments like, “Oh, wow! There is yet another business here — I wonder how long this will last.” And when we tell them we’ve been here since July 2008, they are still quite surprised.
