Interview with Bill Gaume, proprietor
Q: How did you get involved in this business?
A: I’ve been in the restaurant business for 30 years. From the bottom to the top.
Q: What distinguishes you from other businesses in your category?
A: We are an upscale, comfortable tavern with a scratch kitchen, 25 beers on tap, two cask wines on tap and a keg of Jack Daniels. We smoke our salmon, wings, pork belly and pastrami. We have house cut steaks. We also have an old-school well that includes Jack Daniels, Bacardi, Bombay gin and Jose Cuervo. Our house-made tater tots are signature, along with our mahi-mahi fish and chips.
Q: What do you like best about your line of work?
A: The customers that you meet.
Q: What is your business’ biggest challenge?
A: Getting our name out
Q: Something people might be surprised to learn about you or your business:
A: How great the food and service is, along with how nice the inside of the building is.
