Interview with Lisa Colonell-Kastner, co-owner

Q: How did you get involved in this business?

A: Glenn Kastner started working for Denny’s restaurants in Utah in 1979 and, in 1990, was promoted to district manager of the Denver metro area. That is where he met me. I’m a Colorado native with family dating back to 1905 in north Denver and grew up working at the neighborhood Denny’s on Fifth and Wadsworth, which is no longer there. In 2013, Glenn resigned as director of operations for Denny’s when he was told he needed two complete shoulder replacement surgeries. The surgeries were six weeks apart and involved a yearlong recovery. During his recovery, I worked at Willow Creek Restaurant and Keys on the Green in Evergreen. One day in April of 2014, Glenn suggested we open our own place. That was the beginning of the Den. With the whole family’s help — our kids Chad, Levi and Coral, parents Paul and Irene Colonell and dear friends Sheila and Mogens Jorgenson — we were able to open on June 6 on my 43rd birthday.

Q: What distinguishes you from other businesses in your category?

A: We have something for everyone. Breakfast served all day and real potatoes used for our country potatoes and Den-Fries. We have pizzas that have fresh ingredients and piled high. Burgers, “Den-Wiches” (sandwiches), pasta and homemade pies. We are in a cozy spot in the middle of Conifer and Evergreen. We offer Wi-Fi, TV, a pet-friendly patio with an upcoming pet menu, and we’re kid-friendly with a hall of art dedicated to young artists. We have delicious food with gluten-free options. The guest is No. 1 at the Den.

Q: What do you like best about your line of work?

A: We both enjoy creating an atmosphere where people can relax and have a good time while getting a Den-licious meal at an affordable price. The guests and our employees are the best part of our work. Now that we have our own place in our own neighborhood, we are looking forward to meeting new faces and making new friends.

Q: What is your business’ biggest challenge?

A: Our biggest challenge is space. We have become so busy that, at times, we have no seats available. But you can always pick up your favorite meal or have it delivered free in our Den-zone, yes we are a little Den-crazy!

Q: Something people might be surprised to learn about you or your business:

A: The common expression when the meal arrives at your table is “Wow!” Wow for the presentation aroma, and wow for the quality, quantity and delicious freshness. We love music, art, photography, animals and creating tasty food. You will find it all at the Den.
