Fruition restaurant, the popular spot at 1313 E. 6th Ave. in Denver, is getting a makeover. After eight years, chef-owner Alex Seidel is shuttering his cozy shrine to contemporary American food on Jan. 28, with a reopening scheduled for Feb. 6.
“I’m pretty excited about it,” Seidel said. “We can’t make the restaurant any bigger, but the interior is pretty much going to be completely gutted. We’re trying to bring the two rooms together a bit more.”
Seidel terms the refurbishing a “cosmetic” makeover. His rotating seasonal menus with an emphasis on local ingredients – including ingredients grown on the restaurantap farm – will remain.
“We’ve always prided ourselves on sophisticated comfort food from day one, so we’ll stick with that,” he said.
Seidel described a new as a paneled room with dark woods and a “bit more warmth to it.” There will be brand-new tables, chairs and booths – pretty much a complete redo.
Fruition’s Feb. 6 reopening will be on the restaurantap eighth anniversary. Asked if it feels like 80 years or 8 months since he launched the place, Seidel laughed. “It feels like itap gone by so fast,” he said. “So much has happened. Itap been a lot of fun.”
It has been a busy few months for Seidel. Last year he opened a second restaurant, , in the renovated Denver Union Station in LoDo.
