Two new restaurants will open in Cherry Creek North at : SOL Cocina, a restaurant with modern interpretations of traditional Coastal Mexican cuisine, and Blue Island Oyster Bar, developed by the same team that created and Humboldt Farm, Fish, and Wine.
The announcement was made today by Western Development Group, which is developing the $100 million mixed-use development that will also include Arc’Teryx, a design company specializing in technical high-performance outerwear and equipment, and a new Starbucks location.
Construction of 250 Columbine started in Aug. 2013, and will be completed by May 2015, developers say.
Blue Island Oyster Bar capitalizes on one of the biggest food trends predicted for 2015 – oyster eating. Wild-diver caught oysters along with farm-raised oysters will be offered daily, 7 to 10 different kinds.
SOL Cocina is like a Baja taco bar, featuring chef-owner Deborah Schneider’s modern interpretations of traditional coastal Mexican cuisine. They feature a menu focused on fresh, seasonal ingredients along with a bar that honors the flavors of the Baja region with over 60 artisan tequilas.
Schneider got the idea to start SOL Cocina after her countless surfing trips on the Baja coast, and there are already SOL Cocina restaurants in Newport Beach and Playa Vista, California, and Scottsdale, Arizona.
