Pete Contos knows his way around a tasty Denver breakfast. The signature burrito at Pete’s Kitchen is the stuff of local legend, especially among club kids.

But today at we sing the praises of a dish at another one of Contos’ restaurants: Greek Town, which sits further east of Pete’s Kitchen at 2910 E. Colfax Ave. The dish I’m lauding: the spinach-and-feta Greek omelet, seasoned with dill and accompanied by excellent skillet potatoes.

The omelet comes with a ramekin of tzatziki sauce, of course. And while you can get toast with it, you should really order a warm, toothsome round of pita bread. (It makes a great dipper for whatever sauce doesn’t make it onto your omelet.)

Greek Town attracts an array of regulars. Many have their favorite booths. Others camp out at the counter, where they can watch the cooks on the line assemble their meals. Down at the end of the counter, the TV is always tuned to CNN. You know, so you can keep up on all the swell events happening in the world.

Me, I just keep my head down in that spinach-and-feta omelet, slathered with tzatziki and with a mug of decaf on the side. Opa!
