Interview with Carlos Morales, co-owner

Q: How did you get involved in this business?

A: My father has always worked in the food industry, both in California and in Colorado. It was his dream to have a family-style restaurant in the city that has been nothing but great to us. We finally got the opportunity in 2010, after a few other culinary endeavors.

Q: What distinguishes you from other businesses in your category?

A: The thing that distinguishes ourselves from other restaurants would probably be our staff and our menu. We are truly lucky to have such an amazing team, coming in to work and seeing all those smiling faces. They work hard and make our place run like clock work. As for our menu, chances are there is something on the menu for everyone, no matter what your craving.

Q: What do you like best about your line of work?

A: The best thing about my line of work would have to be people — both customers and our staff. The customers we have keep us motivated, smiling and laughing. I also get to work with a team that is always willing to learn and better themselves, and, in a rush, I wouldn’t trade a single one. I was lucky enough to grow up watching my father work his way through just about every position in the food service industry; that gave me a chance to get a taste of what it takes to do this line of work early in life. I learned from one of the best and have grown to love what I do.

Q: What is your business’ biggest challenge?

A: The biggest challenge we face would have to be getting more of an online following. We may not be the most hip spot in town, but we cook a great meal and wish we could let more people know about us.

Q: Something people might be surprised to learn about you or your business:

A: One thing that may surprise some people is that we would work many festivals and sell Mexican food at those events. We were good at it, too — that played a big part in where we are today. A big thank-you to all those who would wait in long lines at the Cinco de Mayo and Taste of Colorado festivals just to try what we had to offer.
