Interview with Brett Yoho, co-owner
Q: How did you get involved in this business?
A: I began working in the restaurant industry at age 16, waiting tables at a local pizzeria. Over the last 24 years, I’ve worked in nearly every kind of establishment, from coffee shops to nightclubs, fine-dining bistros to neighborhood hotspots. In that time, I had the privilege of learning the ins and outs of the industry from a wide variety of exceptional owners, managers and co-workers. I rely on that knowledge and experience every day running Revival Brews.
Q: What distinguishes you from other businesses in your category?
A: First, we work extremely hard to bring in a unique, rotating selection of beers. In fact, since opening four months ago, we’ve already served over 75 different brews on draft. With 12 taps available, that works out to a new beer about every day and a half. Second, chef and co-owner Jay Newman strives to offer exceptional homemade pub fare, made with the best available ingredients, offered at affordable prices. Finally, our atmosphere is unique — laid-back and unpretentious, but maintaining an element of comfort and class. We reside in a rustic mountain building dating back the late 1800s, Evergreen’s first post office. You’ll hear bluegrass and Americana music playing over the speakers, rarely see our TVs on except during the biggest events, and notice the vibrant conversations going on between friends, families and locals.
Q: What do you like best about your line of work?
A: My absolute favorite part is helping to create deeper connections between our staff, our guests, the products we serve and the passionate people who craft those products.
Q: What is your business’ biggest challenge?
A: One of the things that makes us unique is also one of our biggest challenges. Being in a building 125 years old, there are so many little things to be aware of, so many things that need to be treated just right. Even so, there are always surprises that come up when you’d least expect.
Q: Something people might be surprised to learn about you or your business:
A: We opened Revival Brews solely on personal savings and small loans from friends and family (largely because no banks would give us a loan). To save on the costs of renovation, my business partner and Revival Brews chef, Jay Newman, and I did all of the five months’ worth of remodeling work ourselves, along with the tireless help of Jay’s father, Clark, and several days of volunteer work from friends and family. For many months during the remodeling process, we both worked double-duty at Duo Restaurant in Denver’s Highland neighborhood.
