This jam was created to go with a grilled , but it would also work beautifully with roasted pork.
Ingredients
1 pound Colorado Bing cherries, pits and stems removed
½ cup sugar
¼ cup orange juice
1 tablespoon black pepper
1 sprig rosemary
Directions
Simmer all ingredients in a small pot for 30 minutes. Remove from heat and discard rosemary sprig. Puree all ingredients in food processor of blender. If you want the jam to be thicker, you can further reduce it in a saucepan over low heat for 1-2 hours.
