Sushi Ronin has just been named the last tenant in the new five-story mixed-use development at 2930 Umatilla Street in the LoHi neighborhood.
Itap helmed by executive chef and partner Corey Baker, who has more than ten years experience in the art of sushi and Japanese cuisine.
He was head sushi chef at , where he worked for more than six years, and before that, he opened Sushi Hai, located in the Highland neighborhood, and ran that kitchen as executive chef for three years. He’s also worked in kitchens at places like Sushi Sasa and Sushi Yoshi.
Sushi Ronin will be located at the street level, and on the top floor will be another restaurant, operated by Justin Cucci, the chef-owner of such popular Denver restaurants as , Root Down and Ophelia’s.
Cucci’s restaurant will have great views of the city and an open-air patio, while Sushi Ronin will feature transitional indoor and outdoor space.
The restaurants are expected to open later this year.
The project is being developed by Gravitas Development Group, which also created the mixed-use office, restaurant and retail complex made from shipping containers located on the corner of 25th and Larimer in the RiNo neighborhood.
