A couple of recent visits to , a newish restaurant in Denver’s Lowry neighborhood, turned up some tasty dishes in a spiffy room. One that I to was a watermelon salad with fresh burrata, the creamy cousin to mozzarella that is the pride of Padua, Italy.

Watermelon salads started popping up on American menus about 10 years ago, with watermelon-and-feta a popular variation.

But the one at Cafe Mercato takes the Italian route, sitting atop a bed of peppery arugula and laced with a balsamic reduction and a tangle of basil. It really is a blast of summer freshness and flavors.

If you’re an airplane buff, eating the salad comes with an added bonus: The restaurant has a view of the B-52 Stratofortress that sits outside .
