At in Denver’s LoHi neighborhood, one chef is moving on and another chef is moving up.
Jesse Vega is the new executive chef at the restaurant, replacing Matt Selby, a longtime figure in popular Denver kitchens who says he plans on a future as a consultant — possibly outside the industry.
Vega, the current sous chef, is a native of Queens, New York. He arrived in Denver two years ago and has run Central Bistro’s Sunday brunch, which he reimagined soon after being hired. “Soon after Jesse arrived we all recognized his unique talents in the kitchen,” Central owner Isiah Salazar said. “Jesse is a very talented young chef.”
Selby, who previously helmed kitchens at and , is taking a break from the restaurant business, at least for a while.
“I’m retiring from leading as a chef,” he said. “I’ve realized that my capacity to lead, share and achieve far surpasses any skill I have for putting food on a plate.”
Selby said he planned to spend more time with his family and “recharge my batteries,” adding that he’ll seek consulting and project opportunities both in and outside the restaurant industry. His last day at Central is Nov. 22.
