Interview with George Karavasilis, owner

Q: How did you get involved in this business?

A: I started 35 years ago as a dishwasher in various restaurants around Denver. I worked my way into management and I knew one day I’d have my own restaurant. I opened the present location in 2004. The first day I opened, I made $78. But I have always had faith in myself and believed in what I was doing.

Q: What distinguishes you from other businesses in your category?

A: I have never been afraid to take a risk or have made my life about making money. My restaurant is different because I enjoy people. I like their stories. I love seeing them every day. It’s wonderful to have such a big family, such good friends. My clientele are more than customers. They are a part of me and my family. I am always thankful and I will always work my hardest for them and make sure their money is well-spent. I know this might sound simplistic or trite. I sincerely believe if you make your business about something other than just making money, you will succeed and be fulfilled.

Q: What do you like best about your line of work?

A: I love meeting people, I love the sense of community. I like that I have accomplished something. We serve simple, hearty, great-tasting food. And I try to make everyone feel at home and special.

Q: What is your business’ biggest challenge?

A: The biggest challenge is always trying to find enough help. Working in a restaurant is hard work and, like any job, it can be stressful. Thankfully we have developed talented people who have remained loyal. But it was very hard at first. We do have very hardworking employees and I love and care for them more than they know.

Q: Something people might be surprised to learn about you or your business:

A: One of my signature items is my green chili. I am Greek, but my cook and I developed this recipe and it has quite a following. I think that is unusual. My customers and my head cook, Angel, call it GrecoMexican green chili. Angel has been with me from the start and has really helped develop our dishes and makes sure the quality never changes. He started as a busboy and has been with me since. I was born and raised in Greece and came here to go to school. I got married here and moved my family to Greece for a time, but we decided our hearts were here in the U.S. Due to this restaurant, I proudly put both my children through university. I can’t say enough thanks to the community for supporting me all these years. I can’t say enough thanks to all our customers and friends.
