Interview with Damon Scott, owner/operator
Q: How did you get involved in this business?
A: I had no choice. As a kid, I used to request that my dad cook chicken marsala and Armenian rice pilaf for my birthday. My grandfather would make stuffed raviolis for our holiday gatherings. When my wife, Sarah, and I got married a little over a year ago, I “hired” my mom to prepare traditional Italian porchetta and fresh linguini with wild mushrooms in a cream sauce. My dad’s best friend was Cuban and we used to eat authentic Cuban food while watching John Elway and the Broncos create Mile-High magic on snowy winter days. Finally, my new in-laws had the culinary chops, the desire and the passion to partner up and start the Abide Ride. The business materialized in a matter of months. I’ve had the idea for about a decade. I’ve been “in training” my entire life.
Q: What distinguishes you from other businesses in your category?
A: We are a food truck. In Conifer. Approximately 3,000 feet above and 30 miles southwest of the food truck craze that’s taken over metro Denver. We are endlessly curious and, even though Mom told us to “stop playing with food,” we love playing with food! We like exciting and bold flavors. Because we are small, we can be quick on our feet in aligning ourselves with modern, unique and unpretentious cuisine that stimulates the palate and conversation.
Q: What do you like best about your line of work?
A: Freedom. Creative control. The ability to try out a new idea and receive immediate feedback — good or bad. The connection with the community. Being on a first-name basis with our regulars and taking the time to meet new customers and ask how their day is going. Closing the doors at the end of the day with the satisfaction that I put every ounce of my heart and soul into making people happy through food.
Q: What is your business’ biggest challenge?
A: Currently, it’s winter. My wife would tell you it’s my culinary ADD. I think it’s focusing on what we do well and striving to make it better.
Q: Something people might be surprised to learn about you or your business:
A: They say, “Don’t quit your day job!” I didn’t. I am a third-generation professional musician. My grandfather was a Big Band drummer and my father a recording engineer. I have performed locally, regionally and nationally for more than 15 years. I teach drum set lessons at the Evergreen School of Music. My band (funk, rock, folk, jazz, brass, world) is available for weddings, private parties or long walks on the beach. Seriously, the Abide Ride can cater your next event and provide entertainment.
