Interview with Jeremy Yurek, owner, and Katherine Yurek, co-owner
Q: How did you get involved in this business?
:Jeremy actually grew up making pierogi with his family. It has been a family tradition of theirs for generations. We first started as a Polish-cuisine food truck in 2012, which then evolved into a farmers market business where we sell our pierogi packaged and frozen by the dozens. The pierogi was one thing on the truck that was in high demand. I began working with Jeremy as a way to take some time off from accounting, and it quickly evolved into a full-time job. Here we are three years later and our pierogi empire is still growing.
Q: What distinguishes you from other businesses in your category?
:There are other pierogi companies in Denver, and of course throughout the U.S., but we focus on a wholesome, authentic, handmade pierogi that has a modern flair. While always making our traditional potato and cheese, we make all sorts of unique flavors as well, i.e. chile relleno, pulled pork, buffalo chicken, tomato-basil-mozzarella, and the list goes on.
Q: What do you like best about your line of work?
:Jeremy and I get to work together on everything. It has grown our relationship so much because we make all of our decisions together, we travel together, we battle hardships together and we get to celebrate our successes together. It truly is a blessing.
Q: What is your business’ biggest challenge?
:Growth. We are always trying to figure out how to grow, when to grow and when to know to slow down.
Q: Something people might be surprised to learn about you or your business:
:We started our business with almost nothing in our bank accounts and had absolutely no idea that we would be where we are today, especially since a large percentage of our customers had never even heard of a pierogi until they met us.
