Central Bistro and Bar will serve its last meal on June 11, but don’t worry — the blazing red “Hot” sign will live on.

Central’s owner decided to switch concepts, and the restaurant will re-open as Candela Latin Kitchen later this month. Candela will be a mix of Caribbean, Latin American and Mexican fare.

“It has been a great five-year run for us at Central Bistro, and we have been fortunate to be a part of this growing neighborhood and food scene, but (chef Jesse Vega) and I felt it was time for a change,” said owner Isiah Salazar.

“We have watched the success of our brunch business over the years and we started talking about ideas and ways to replicate that high-energy style of dining every night of the week. We ultimately came to the conclusion that we should create a place that serves the food we loved growing up — tacos, empanadas, ceviches and tostones — and that’s how Candela Latin Kitchen was born.”

Salazar said that keeping things affordable will be a priority at the new restaurant. Of course, the definition of “affordable” is different to everyone. To Salazar it means that nothing on the menu will be priced above $16, which, for Denver’s restaurant scene right now, seems pretty reasonable.
