FORT COLLINS — Long lines. Packed concourses. Not enough hot dog buns.
The initial test run for concessions sales at Colorado State’s on-campus stadium hit some bumps as too few vendors were in operation at the Aug. 5 public scrimmage. But college football foodies need not fret.
CSU’s 11 vendors and 19 public concessions locations will be fully operational Saturday to serve a sold-out crowd for the Rams’ kickoff against Oregon State.
Here are five notable dishes and where to find them at CSU games this fall.
1870 Brat: Cajun sausage topped with peppers and onions
There’s a big southern influence in the Rams’ locker room. The coaching staff has several members who grew up in Georgia, Mississippi and North Carolina, and CSU has a combined 19 players from Georgia, North Carolina and Louisiana alone. Cajun food reigns supreme in some of those parts.

Cam’Tina: Ultimate nachos

An absolute must at any sporting event: well prepared, and well portioned, nachos. Coors Field sets the bar high with some of its chip-and-cheese combinations. Time will tell whether those standards are also met at Sonny Lubick Field.

Foco Dogs: Fat Tire specialty hot dog
If it wasn’t enough that New Belgium had its own porch and its own CSU-branded beer (Old Aggie Superior Lager), the local brewery will also have a “specialty hot dog” available for purchase at the on-campus stadium. It takes the classic all-beef hot dog, and then tops it with beer cheese and fried pretzel pieces.

Mount Mac: Jumbo hot dog topped with macaroni and cheese

One reason the food truck scene has thrived on the Front Range is the result of unique and fine-tuned flavor combinations. Macaroni and cheese, plus hot dogs? Why not. If done right, this unusual dish could draw big crowds.

Fresh Express: Portobello burgers

The first four items on this list don’t account for calories. For the health conscious, why not substitute a beef patty with a mushroom for a modern take on the hamburger. (Don’t worry, meat eaters, Colorado beef hamburgers will be available at several concessions stands, too).
