
A vegan restaurant will soon open in the Denver Design District complex on South Broadway, the landing ground for a couple who spent years working as pop-up vendors.
Mother Other is owned and operated by Alexi Mandolini and Taylor Herbert, who met in Denver. Their last concept, The Easy Vegan, won a Food Network food truck competition in 2023.
When it opens Saturday, June 27, Mother Other is expected to be home base for Mandolini’s vegan cooking and Herbert’s cocktail handiwork. It’ll be open for dinner Thursdays through Sundays.
“Farmers markets are an incredible proving ground, but they can’t replicate the full dining experience,” Herbert said in a statement Monday. “My background is in bartending and bar management, and there’s a craft to that work that I’ve been eager to bring back.”
Mandolini’s menu includes pierogis stuffed with potato and chive, dumplings with spring pea and leeks, and a deep-fried risotto with house-made giardiniera, hinting at her past experience and education in Chicago.
The couple enlisted friends and family to help them update the restaurant’s interior, according to their opening announcement. Mother Other is located at 675 S. Broadway in Suite 300 on the south side of the property.
