
This compact book, “Field Guide to Meat” (Quirk Books, 2005, $14.95 paperback), by Aliza Green, is something you may wish to tuck into pocket or purse when you go off to the market.
According to the cover, it tells “how to identify, choose and prepare practically every meat, poultry and game cut.” Most consumers in the United States would indeed find their needs for information met – yes, detailed accounts of beef, lamb and chicken are included, as expected.
But this is also the place to read up on alligator, bear, raccoon and rattlesnake, among other game meats, often shown in small color photos to help in shopping. An option the book offers for your rattlesnake purchase: Deep fry and serve with salsa.
