Arugula: Ah-ROO-guh-lah, Italian. Also called rocket, roquette and Italian cress, this salad green has a bitter, peppery flavor and is high in vitamins A and C. It often shows up in mixed greens (mesclun). Rinse leaves thoroughly in cool water and dry on paper towels, then wrap tightly in a plastic bag. Use within two days.
