Anyone who subscribes to the philosophy “do one thing and do it right” can relate to Freshies Restaurant in Steamboat Springs. The one thing this vegetarian-friendly restaurant does best is brunch. Sure, that’s technically two things – breakfast and lunch – but to the throngs of locals who flock to this affordable neighborhood eatery conveniently located on the bus line between downtown Steamboat and the ski mountain, that’s not really an argument worth taking up. What’s most important is the relaxed family atmosphere in view of Mount Werner. Or maybe it’s the sunny patio. Or possibly the cozy fire pit. And don’t forget the homestyle American cuisine. Oh, wait, now I remember. What’s most important are the killer Bloody Marys. Hmm, maybe they do more than one thing right over there after all.
