Harissa: huh-REE-suh, Arabic. A North African condiment, believed to have originated in Tunisia. Made of hot, really hot, chiles, garlic, cumin, corianer, caraway and olive oil, it can be used on sandwiches and for flavoring soups and stews, but is a traditional accompaniment to couscous.
