Getting your player ready...

Nineteen years ago, Rayno and Patty Seaser opened a small diner on College Avenue in Fort Collins. Called The Egg & I, the Seasers’ restaurant served high-end breakfasts in a speedy, bright café. This state’s appetite for quality breakfasts has fueled the Seasers’ Egg & I expansion to 19 locations across Colorado. It’s rare to find one without a line outside the door on a Saturday morning. There is fresh-squeezed orange juice, plus carafes of tasty dark roast coffee, fresh-made corned beef, huge crepes, frittatas, swollen skillets and, of course, lots of eggs. Try the chicken-stuffed cordon bleu skillet or the Hiker’s Bennie: proscuitto, asparagus, tomato and portabella mushrooms, all swimming in a dill hollandaise.

Get there — A stop at the Egg & I is always worth the wait. Find a location at www.theeggandirestaurants.com.
