Croque-madame: croak mah-DAHM, French. Popular as a snack in France, a croque-monsieur is made of buttered bread, thin-sliced ham and gruyère cheese. It resembles a grilled cheese sandwich, except when it’s dipped in egg batter and fried, then it resembles French toast. The croque-madame comes with a fried egg on top or chicken instead of ham inside. “Croque” means “crunch,” so the sandwich is, literally, a “crunch-sir” or “crunch-madame,” but no one knows how it got the name. Look for it at Brasserie Ten Ten in Boulder, Bistro Vendôme and Le Central in Denver, and Jean-Pierre in Durango.|Source: “The Oxford Companion to Food,” by Alan Davidson|Kristen Browning-Blas
