Mas Amiel Maury 10 Ans d’Age Cuvée Spéciale, about $30
Chocolate is difficult to pair with wine, but if there’s one that can work, it’d be this. It comes from Maury, a nearly forgotten appellation in the rugged, hot hills of southwestern France. It specializes in sweet wines with a twist: Not only are the wines made from very ripe grapes (grenache, carignan and macabeo, in this case), but the wine also is put in glass demijohns and left to bake in the sun for a year. After a few more years resting in large oak casks, the wines turn out lusciously smooth and as rich as spiced figs robed in caramel and chocolate. Check it out with chocolate mousse.
