Coyote Cantina likely has the best view of any Mexican restaurant in the state. A cold cerveza with a steaming Ultimate Coyote Deluxe Dinner under the shadow of several fourteeners is just about the finest way to wind down a day of play in the Ark River Valley. The rustic restaurant in Johnson Village, just outside Buena Vista, has long lured locals and visitors alike with its Wild West theme and deliciously simple Mexican food. The cantina’s breakfast burritos, bursting with chorizo, rank among the state’s best. And the crunchy, gooey chile rellenos are trophy-worthy. The steak guisada is exemplary and the cantina’s fajitas are equally memorable. For those on a budget, Coyote has some of the best deals in the valley and delivers mounds of vittles at good prices.
