Ingredients
2 cups tamarind concentrate (or paste)
3 chipotle chiles en adobo (canned)
1 cup tequila
1/2 cup orange marmalade
2 pounds chicken wings
Directions
In a blender, purée tamarind, chipotles, tequila and marmalade. Place wings on a baking sheet and toss them in the sauce.
Preheat oven to 350 degrees. Toss the wings with the mixture one more time before placing in the oven. Bake about 45 minutes, or until tender.
