This easy version of the Spam cake from Le Bakery Sensual featured on the Sept. 19 Food section cover is adapted from cooks.com. (Bakery Sensual does not give out its recipes.) Tested at Denver’s altitude.
Ingredients
1 package yellow cake mix (we like Duncan Hines)
1 package instant or regular vanilla pudding
1/3 cup flour
1/2 cup oil
1 teaspoon almond extract
3 eggs
4 tablespoons poppy seeds
1 cup hot water
Icing:
1 cup powdered sugar
Juice from 1 lemon
1 teaspoon almond extract
Directions
Mix cake and pudding mixes with flour. Add oil, almond extract, eggs (one at a time), poppy seeds and hot water. Beat 2 minutes. Pour into greased and floured Bundt pan. Bake at 350 degrees for 40 minutes.
Icing: Mix all ingredients and pour over warm cake.
