Cinnamon-stick skewers not only make a great presentation for this chicken, but also infuse the meat with a wonderful flavor. From “Hors d’Oeuvre at Home,” by The Culinary Institute of America, makes 36 pieces.

Ingredients


   6 boneless, skinless chicken breasts (about 3 pounds)

  18 long cinnamon sticks, split in half lengthwise

 1/4 cup prepared plum sauce

 1/4 cup dry sherry

   1 tablespoon hoisin sauce

   1 tablespoon soy sauce

   3 green onions, thinly sliced on the diagonal

   2 tablespoons sesame seeds

Directions


Preheat the grill to medium-high.

Cut the chicken breasts into 2-inch cubes. Make a hole in the center of each cube (use a metal skewer or paring knife) and thread it onto a cinnamon stick (one cube per stick).

In a medium bowl, whisk together the plum sauce, sherry, hoisin sauce and soy sauce. Add the chicken skewers and gently toss to coat. Grill the chicken 5 to 10 minutes, then transfer to a serving platter and sprinkle with green onions and sesame seeds.
