From “You Won’t Believe It’s Gluten-Free!” by Roben Ryberg. Serve with chips or on sandwiches. Makes approximately 4 cups.
Ingredients
1 pint cherry or grape tomatoes, diced finely
1 small yellow or orange bell pepper, seeded and diced finely
1 small onion, diced finely
1 (5.75-ounce) jar green olives, drained and chopped finely
1 tablespoon olive oil
1 handful fresh basil, chopped finely
Directions
In a medium-sized bowl, combine all the ingredients. Mix well.
