Where in this great city of ours can I find navel pastrami? I’ve called a number of places, and each one has said, “Maple?” and I say no, “navel, like belly button.” I have had no luck and was hoping one of the food experts could help me out.

Navel, also called plate pastrami, comes from the end of the brisket and has more fat than other cuts. National and Boar’s Head make navel pastrami, as does Custom Corned Beef here in Denver, which sells wholesale only.
