Ingredients
4 cups pears, cut in 1-inch dice
1 cup light raisins
1 cup cider vinegar
3/4 cup sugar
1/8 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon ginger
1/2 teaspoon ground allspice
1/4 teaspoon ground cloves
2 fresh green or dried red chiles, chopped
1 medium onion, chopped
Directions
Mix all ingredients together. Bring to a boil and cook for 30 minutes, stirring occasionally. Spoon into hot, sterilized half- pint jars; process in a boiling-water bath for 20 minutes at 5,000 feet; for 6,001 to 8,000 feet, process 25 minutes; 8,001 to 10,000 feet, process 30 minutes.
