From “Sabor!” by Ana Quincoces Rodriguez. Makes 1 drink.

Ingredients

  • 4 ounces pineapple juice
  • 2 ounces coconut cream (such as Coco Lopez)
  • 2 ounces light rum
  • 1/4-1/2 cup crushed ice
  • 1/2 slice pineapple for garnish
  • 1 maraschino cherry for garnish

Directions

Combine the pineapple juice, coconut cream and rum in a blender and blend for 30 seconds. Add the ice and blend a few seconds more. Pour into a tall glass or goblet and garnish with the pineapple slice and cherry. Serve immediately.
