If you have holiday leftovers, you’ve got some tasty meals ahead.

To make a delicious hash, heat a few teaspoons of olive oil in a skillet then saute a blend of diced turkey; cooked, diced potatoes; chopped onion; and salt and ground black pepper.

Turkey soup is another easy and healthy way to use holiday leftovers. Add brown rice, and you’ve created a filling meal that will leave you satisfied without adding loads of calories.

For an easy soup, simmer the turkey carcass in chicken broth until any meat is rendered. This will create a rich soup base, to which you can add any leftover or fresh vegetables and grains.

If you have a bag of unused stuffing mix (which often is sold at reduced prices after the holidays) you can get creative — and you don’t even need leftover turkey.

These savory stuffing muffins combine all the ingredients you normally would put in your dressing, plus a bit of creamed corn for added moisture and a pleasant texture. A beaten egg holds everything together.

This recipe uses packaged corn bread stuffing mix, but any variety of stuffing mix will work. If you like, you can season the muffins with poultry seasoning instead of the dried sage and thyme.

These crispy muffins are a great low-fat addition to a leftover turkey supper or served alongside a steaming bowl of homemade turkey soup.
