Getting your player ready...
Adapted from “The Home Creamery,” by Kathy Farrell-Kingsley (Storey). Best with homemade mascarpone, but purchased mascarpone is also delicious. Serves 2.
Ingredients
2 tablespoons sugar
1 teaspoon powdered instant espresso
2 tablespoons dark rum
1 cup mascarpone
Directions
Mix together the sugar, espresso and rum in a small bowl until the sugar and espresso dissolve. Put the mascarpone in a medium bowl. Add the espresso mixture and mix thoroughly. Spoon into serving cups.
