From “Gourmet Made Simple,” by Gena Knox. Goes great with grilled chicken, fish or vegetables. Serves 4.
Ingredients
2 cups chicken or vegetable stock
1/4 teaspoon ginger powder
1/4 teaspoon cinnamon
1/4 teaspoon cumin
1 1/2 cups couscous 1/2cup pecans, chopped
1/2 cup dried apricots, chopped
Directions
In a medium saucepan, bring stock to a boil. Add ginger, cinnamon, cumin and couscous, stir to combine. Remove from heat and let sit 5 minutes. Fluff with a fork, then stir in pecans and apricots.
