This recipe contains raw egg. Makes about 2 cups.

Ingredients

3    egg yolks

     Juice and grated zest of 1 lemon

1    teaspoon salt

     Freshly ground pepper

2    tablespoons capers, roughly chopped

1    cup mixed whole soft herbs such as parsley, chives, chervil, tarragon or basil

2    cups canola oil

1    shallot, minced

A     few shakes of hot sauce

Directions

In a food processor, blend the egg yolks, juice and zest of lemon, salt and pepper, capers and herbs until the mixture is bright green, about 2 minutes. Slowly add the canola oil in a steady stream to make a mayonnaise. Fold in the shallots and hot sauce and taste.
