Makes about 3 cups

Ingredients

8    ounces wild salmon filet, bloodline removed, cut into small dice

8    ounces smoked trout, cut into small dice

2    tablespoons good-quality domestic caviar, such as American Spoonbill

2    tablespoons minced fresh chives

4    tablespoons hard-cooked egg, sieved

1    tablespoon Dijon-style mustard

     Juice of 1/2lemon

1    tablespoon olive oil

2    tablespoons capers

2    tablespoons minced onions

     Pinch Malden sea salt

     Freshly ground pepper

     Few drops hot sauce

Directions

Combine all ingredients in a large mixing bowl. Mix well and serve with toast points, crackers or Lavosh.
