The temperature at which an oil or fat begins to emit smoke (and sometimes a sharp, acrid odor) is its smoke point. Fats with high smoke points, such as refined grapeseed oil and safflower oil, are better for high-temperature cooking; fats with lower smoke points, such as butter and most extra-virgin olive oils, tend to taste and smell bitter or burnt if overheated.
