Recipe by Sergio Romero. Serves 8-10 as a side.
Ingredients
2 tablespoons adobo paste from chipotle peppers (in can)
1 cup grated gruyère cheese
1 cup cream cheese
1 cup sour cream
2/3 cup vegetable oil
2 eggs
1/4 cup diced scallions
1/4 cup diced Pueblo green chile
1/2 cup diced onion
1 1/2 cup corn meal (self rising)
1 cup creamed corn
1 teaspoon bacon grease
Directions
Heat oven to 350. In a large bowl, combine all ingredients except bacon grease. Stir well. Put about 1 teaspoon bacon grease in a cast- iron skillet. Heat until almost smoking hot and then pour the bacon grease into the batter. Stir and pour the batter back into the hot skillet. Bake 30-40 minutes. Should be firm to the touch. I usually put the oven on broil to brown the top.
