The U.S. Department of Agriculture has adjusted its guidelines for cooking pork. The new target internal temperature for pork chops, pork steaks and pork tenderloins is 145 degrees, followed by a 3- minute rest time. (Previous guidelines called for 160 degrees; for ground pork, the USDA still calls for 160.) What this means to you: Way better pork!
Grilled Honey-Soy Pork Steaks
Recipe from the National Pork Board. Serves 4.
Ingredients
2 pork blade steaks, cut 1 inch thick
2 cloves garlic, minced
2 tablespoons chopped onion
2 tablespoons lemon juice
2 tablespoons soy sauce
1 tablespoon honey
Directions
Combine all ingredients in a self-sealing plastic bag; seal bag and place in refrigerator 4-24 hours. Remove steaks from marinade, discarding marinade. Grill over medium-hot coals, 7 minutes per side, turning once until internal temperature on a thermometer reads 145 degrees. Rest 3 minutes before serving.
