Serves 4 as a side dish.
Ingredients
2 pounds fingerling potatoes, scrubbed
4 tablespoons good quality butter, such as Kerry Gold
2 tablespoons thinly sliced scallions
1 tablespoon capers
2 tablespoons chopped parsley
Salt and freshly ground pepper
Directions
Place the potatoes in a pot and barely cover with water. Add a pinch of salt and bring to a boil and simmer just until tender, about 20 minutes.
Drain the potatoes and set aside.
In a small saucepan, bring 1 cup water to a boil. Add the butter and a pinch of salt and simmer the mixture until thick and creamy.
Add the potatoes and simmer to heat through, about 4 minutes. Add the scallions, capers, parsley, salt and pepper.
Serve the potatoes with their butter sauce as a side dish with roast chicken, steak or wild salmon.
